I sat and thought long and hard about what would be my first recipe to share with you. Breakfast! or brunch? who cares!
I came up with this recipe years ago and I’m very happy to share it with you here today. On the weekends, in my busy home, weekends are for bonding and eating! This is a great dish for an early Saturday morning. Usually I like to wake everyone up with a scent that will dig into their unconsciousness and drags them out of their sleep.
This dish is INCREDIBLY DELICIOUS, robust and the smell, the SMELLomgness! This dish will concentrate itself in your home… Enjoy!

Elena’s Eggs Au Gratin – Serves 4
- 10 Eggs
- 1 small shallot chopped
- 1 tsp fresh minced garlic
- 2 tbls heavy cream
- 1 tbls unsalted butter
- 1/4 tsp Thyme
- 1/2 tsp Oregano
- 1/4 tsp Sun-dried tomato flakes
- 1/4 tsp Parsley flakes
- 1 tbls Garlic Pepper Seasoning
- 1/3 cup Shredded Cheddar Cheese
- 1/4 cup Finely grated parmigiano-reggiano
Step 1 – Pre-heat oven to 375o then butter up a 8x8in. pan
Step 2 – Separate egg yolks from egg whites. Working only with the egg whites in a separate bowl, whisk together the whites, heavy cream, shallots, garlic & herbs.
Step 3 – Assemble in order below…
Add yolks to buttered pan and pour egg whites mixture over the yolks. Sprinkle cheddar cheese and parm cheese over the mixture.
Step 4 – Place in 3rd rack of the oven and let bake uncovered 30min

Step 5 – Divide and serve with ciabatta bread & ENJOY!
