The Posh Latin’s Pantry

These are the staples that I RELIGIOUSLY keep in my pantry and fridge.  I make a all my condiments and seasonings ahead of time so I never run out. You would be surprised to find that you probably have these sitting in your pantry as well. I even have a few AeroGardens to help ease the pain of last minute store runs. See picture above? I grew all that in my AeroGardens!

Boriqua Pantry

  • Sazón – All hail the Goya company right?… Not me! Their gimmick line… “si es Goya tiene que ser bueno” well that’s not necessarily true! My mother was very health conscious. She never allowed us to cook anything that came out of the box. That includes mac n’ cheese! You wouldn’t know it, but that little pkt is full of all kinds of cancer promoting ingredients and are full of sodium. Take my route and be a little more health savvy! You can make a large quantity and store in a jar container like I do.

Sazón Recipes:

  1. Red Sazón; combine equal amounts of sea salt, granulated garlic powder, cumin, annatto seeds, saffron, turmeric. Grind ingredients in a pilón and pulverize!  Use 1 tbl at a time.
  2. Green Sazón; combine equal parts of sea salt, granulated garlic powder, onion powder, paprika, cumin, oregano, fresh black pepper, dried bell peppers, crushed bay leaf. Mix and use 1 tbl at a time.
  • Adobo– Found at any latin isle but why take chances with your health? Do what I do and make/store your own. Your heart will thank you!(some people might find it hard to believe but Adobo is a mix of Salt, garlic powder, black pepper, oregano & turmeric!)
  • Liquid Sazón – My favorite ingredient!

1 cup vinegar, 1/2 cup water, 1 green pepper, 1 red pepper, half onion, 1 tsp salt, 1 tbl granulated garlic powder, 1 tbl tomato paste, 1/4 tsp citric acid, 1/2 tsp annatto seeds (granulated), 1/2 tsp oregano, 2 tbl chopped cilantro leaf. Combine in food processor using the chopping blade. Pulsate until well blended.

  • Sofrito*Note If purchasing sofito at a store here are a few things you should know… Normally you will find sofrito in your frozen isle in Goya or Knorr brands. Goya makes 2 different kinds. Red and a green.  You want the green stuff which is labled “Recaito” even though the red says “Sofrito”.  Traditionally Puerto Rican “sofrito” is not red and does not have tomato in it. Just saying! Goya… get it right! Que pasa!

  • Dried Beans – Dark Red Kidney, Gandules (Pigeon peas), Black Beans, Garbanzos, Cannellini Beans, Pink Beans, Pinto Beans
  • White Long Grain Rice – I use a Jasmine rice or Canilla brand rice.
  • Annatto Seeds to make food coloring such as Achiote Oil
  • Tomato Sauce- not the Italian kind!! Spanish Style Tomato Sauce
  • Tomato Paste – Any brand will do.
  • Green Spanish Olives
  • Capers
  • Roasted Red Pepper (jarred)
  • Cured Cooking Ham
  • Chorizó (sweet)
  • Bacalaito
  • Evaporated Milk

  • Equadorian “Ajo”  – Similarly used like Sofrito
  • Colombian “Hogao” – Similarly used like Sofrito
  • Achiote en Oliva – Annatto seeds boiled in olive oil. Only the oil is used.
